Beets, White

(Beta vulgaris subsp. vulgaris) Biennial in the Goosefoot Family. We originally acquired this heirloom variety from Baker Creek Seeds. Sweeter than the colored beet varieties. Sizes up well without getting woody. An excellent addition to a winter root bake, or you could try making an albino borcht. Greens are also edible — after all, Chard is the same species as Beet, just bred for leaf instead of root.

Planting suggestions: Direct seed after soil temperature has reached 50 F, but before the weather has heated up. Beets need some nutrition in the soil; work in compost or fertilizer before planting. In cold winter areas must be harvested and root-cellared.  In milder climates (such as the Pacific NW) can overwinter if cloched or mulched heavily.

Contains at least 50 seeds. Packed for 2016.
