(Helianthus anuum) Annual in the Aster Family, native to the Great Plains of N. America. Generally 5-6 ft. tall, but can get up to 10-12 ft. (or more). Seeds are edible. Leaves are smokeable; have in fact been used as a tobacco additive/adulterant.
Cultivation & harvesting suggestions:
Sow in Spring, as soil is warming up. The farther apart you space them, the bigger they’ll get. 2 ft. is a good minimum, 3-4 ft. is better. For seed harvest, watch the birds. When they start picking at the head, it’s time. Cut head and hang someplace dry and protected from further predation. Or tie a paper bag around the head to let it finish in the field. Rub head briskly to remove seeds.
